Orlando's distributors sell to hospitality at a scale few other metros see, and the buying pattern shows it: large accounts with many delivery points, standing orders that change with occupancy, and a purchasing contact who is a chef or a director of operations rather than a buyer. The distributor's office absorbs all of that by phone and email, and the office is the ceiling.

Not in a first build — EDI is on the list of things a first build deliberately excludes, along with ERP write-back and multi-site. What a first build can do is take the account's PDF or emailed orders through AI intake into your queue, which solves most of the same problem in weeks. EDI can follow once the desk is proven.
